  • 1 cup kumquats, halved (seeds removed)

  • 2 teaspoons lime juice

  • 2 tablespoons finely diced red onion

  • 1 tablespoon finely diced jalapeño

  • 2 tablespoons chopped Italian parsley

  • Drizzle of pomegranate molasses

  • Lemon-infused olive oil

  • Kosher salt to taste

If red onions aren’t available, substitute with shallots or even white/yellow onions. (Note: White onions might take on a subtle tint from the kumquats.) Soaking red onions in ice-cold water helps soften their sharpness.

Jalapeño Pepper:
Enjoy the medium heat of jalapeños, or if you prefer more spice, add extra and include the seeds—or try serrano peppers for an extra kick.

Lime Enhancements:
This recipe calls for 2 teaspoons of lime juice (roughly two-thirds of a lime, as one whole lime yields about 3 teaspoons). For an extra layer of brightness, add 1 teaspoon of finely grated lime zest.

Kumquat Salsa Variation:

To create a milder version, simply leave out the jalapeño pepper.

You can also, swap parsley for cilantro. Keep in mind, cilantro offers a distinct flavor profile, embrace it if you’re a fan.
