That’s exactly why we love featuring a cheese of the month — to take a little guesswork off your plate and give you a fresh, delicious option to try. This month’s pick might not be the flashiest at the party, but trust me, it’s got quiet star power. Give it a spot on your board and let it surprise you — in the best kind of way.

This month, we’re spotlighting a true classic — Cheddar! It’s our cheese of the month, and while it may seem like an old standby, trust me when I say Cheddar has way more to offer than meets the eye. It is true - Cheddar is one of those tried-and-true classics, but it deserves a second look. And no, we’re not talking about those neon orange slices from the deli or the little cubes hanging out on party trays. Real-deal or as we like to call it Artisan Cheddar-  It’s a whole different story.
 
Artisan Cheddar comes in all kinds of personalities, and that’s what makes it such a cheeseboard staple. Young Cheddar is mellow, creamy, and smooth — the kind that feels comforting and familiar. As it matures, it takes on a firmer texture and a rich, complex flavor that leans sharp, nutty, and even a little crumbly. Aged Cheddar can be bold and punchy, with that irresistible tang that lingers in the best way. Whether you’re going for something subtle or something with a little more attitude, there’s a Cheddar that fits the vibe — and it pairs beautifully with fruits, jams, and all your favorite cozy board extras.

Our favorite artisan Cheddar picks are full of texture, so creating clean, perfect slices or tidy little cubes just aren’t in the cards — and I actually love that. These cheeses are firm, sometimes a little crumbly, and full of character, which means they resist being trimmed into anything too uniform. But that’s exactly how you know they’re the good stuff. Instead of fighting it, I lean into the perfectly imperfect vibe by using a crinkle knife  — it’s my go-to tool for turning those rugged edges into something intentionally beautiful. It gives each slice a bit of charm and texture, making the whole board feel thoughtful, playful, and just the right amount of rustic.

Pair with: This month’s Cheddar pairings are all about celebrating the season and letting bold, cozy flavors do their thing. Cherries just landed here in LA, and they’re the juiciest little burst of sweet that plays so nicely with Cheddar’s sharp edge (and yes, pitting them is totally worth it — I use  this cherry pitter and can do six at a time!). Tart green apples like Granny Smith add a crisp, fresh bite, while soft, caramel-like dates bring that rich, chewy contrast we love on a board.

And let’s talk about red walnuts — they’re not just pretty. These buttery beauties are a cross between a Persian red-skin walnut and a creamy English walnut. The result? A brilliant red nut that’s lower in tannins, which means they’re less bitter and way smoother than the usual varieties. They add a mellow, nutty crunch and a gorgeous pop of color.

A drizzle of spicy honey ties it all together with just the right amount of heat. For something savory, I’ve added prosciutto — its salty, silky texture is a perfect pairing. But if you’re skipping pork or going plant-based, try smoked olives, marinated artichokes, or even thinly sliced roasted red peppers for that same depth and contrast. And tomato confit? It’s like the jammy little secret weapon that brings a warm, savory finish to every bite.

There’s just something fun and unfussy about pairing Cheddar with a chilled cider — it feels like spring in a glass. The gentle bubbles and hint of acidity balance the richness of the cheese, while the apple notes echo that tart little bite from the Granny Smiths on your board. It’s the kind of pairing that feels easy but still a little elevated — like you totally meant to do that. Not a cider person? A sparkling white, a dry rosé, or even a bright kombucha can bring that same fresh, breezy balance. Just pour something that feels light, playful, and ready to linger with.

  • My personal favorite, and my go-to for my cheeseboards, is the special reserve English Farmhouse Cheddar from Belton Farms.
    It’s a Rustic Farmhouse English Cheddar,  typically using unpasteurized milk, clothbound and aged, giving it a firm, crumbly texture and a deep, nutty, slightly tangy flavor. This style of cheddar is known for its complexity and rich character, making it a standout on any cheeseboard.
  • Cabot Clothbound Reserve Cheddar
    We’re using an English cheddar, but here’s another excellent option that hails from Vermont! Jasper Hill Farms makes an incredible clothbound cheddar with Cabot Creamery.
  • Trader Joe's Unexpected Cheddar
    Finally, if you want a quality cheddar you can find at your local Trader Joe's, go for the Unexpected Cheddar! This is mixed with an oldie-but-a-goodie parmesan and get something that feels sophisticated but is pure pleasure for the child inside.
